Double S BBQ is double the yes.
In three years, Double S BBQ owners Shon and Sarah have made their mark on the Madison barbeque scene. As a testament to their hard work and talent, the two have received many awards (which you can find adorning the restaurant walls) honoring their prized recipes, including the title of “Best Barbeque in Wisconsin”, by Consolidated Food Service. Shon moved to Madison after spending 47 years building his relationship with barbeque in Southeast Texas. Shon, who comes from Cajun descent, instills a Cajun theme throughout Double S’s menu, adding a spin on the traditional barbeque restaurant. The two work together to bring this one of a kind treasure to us hungry Madison hankr-ers.
Double S dons charming Texan decor, spanning from the recycled, weathered, wooden panelling (restored from an old barn), to the cowboy boots hanging from the walls. It’s a “no frills” type of restaurant, which is truly fitting for the authentic barbeque they’re serving. Food is served on paper plates with plastic utensils. Each table is conveniently topped with a roll of paper towel, because who doesn’t like to get a little saucy when chowing down on some authentic Texas BBQ?
(PS: Monroe Street can get a bad rap for parking if you don't spend a lot of time downtown, but if it's not a Badger gameday you should always be able to find free parking on the neighboring streets.)
After a long and tedious debate in my head, browsing through hankr helped me decide on which dish to order. The brisket sandwich was calling my name, and unsurprisingly, it did not disappoint. The sandwich is served with ¼ pound of house made brisket stacked high on a freshly-baked sesame seed bun and a mountainous pile of seasoned french fries. Double S BBQ leaves the sauce up to you, offering a traditional and hot BBQ sauce. I went with the hot BBQ sauce, which had a nice amount of heat, smokiness and a hint of sweetness.
(PS: Both sauces are made in house and can be bought by the bottle, DO THIS!)
The brisket was tender, flavorful and moist, which is no surprise considering they spend 12 hours cooking it to a smokey perfection (in their specially designed custom smoker).
Fear not: Like any real, authentic smoked BBQ, the brisket from Double S never comes in direct contact with a flame. This intensifies the meaty taste. They use Hickory and Cherry wood to achieve their signature smoky flavor - which I’ve officially fallen in love with.
Sarah was gracious enough to bring out a bowl of authentic Cajun gumbo for me to try. I couldn’t be more appreciative that she did. The gumbo - which came out after I finished the brisket sandwich - was gone within minutes. It’s like I forgot I had just demolished an entire sandwich minutes before. That didn’t matter anymore, this was too good to leave a drop in the bowl. The Cajun gumbo was smokey and comforting - a fitting accompaniment to the rainy day I stopped in on.
Well, Double S, it was great to meat you. If you’re looking for a taste of Texas, Double S BBQ will give you a proper introduction.
